Thanks for that information Michelle. I've just found the PathAuto setting, which is the more important of my two questions resolved. Node titles, however, does alter the title when I change the taxonomy terms on node/edit.

  This doesn't answer your question, but be sure this is actually a problem before spending too much time on it. Pathauto can be set to not change the URL once it's created and auto nodetitles only sets it on create, IIRC.
