There is also a Google Fonts module, which adds ability to use Google Fonts on your site. I checked to see if Gill is available, though and it is not. Might be on Typekit, though.

There's another module that adds webfont API support, but I don't know anything about it.

Font support on the web has classically been a huge hinderance to designers because of OS limitations. Various workaround have evolved over time (Image replacement, sIFR, cufon, etc). The best solution in terms of ease, performance, and accessibility at present is CSS @font-face rules.

Definitely look into using http://drupal.org/project/fontyourface which can assist in the issue. However, many fonts aren't licensed to support webpage embedding. Gil Sans is likely not (being that the foundry is Monotype).

You might consider typefaces here http://typekit.com/libraries/full?style=Sans+Serif&tags=humanist as licensable replacements for Gil Sans via the fontyourface module.

This is sort of what I was looking for I think. A bit more leeway in styling themes.

Certainly does. Some days are like that: your brain feels like a donut. Big hole in the middle.
