We may have added it, but that doesn't give us copyright on the code or
make us the author.

We may be, yes.

But in order to change the license to anything else you'd have to find
and get approval of all copyright holders/authors.

Compiling the list of all these people will be fun. Some people's
changes might have been removed by other people's changes. Some people's
patches might be so small that they probably would not enjoy copyright
protection, etc...

It is probably simpler to ask who is opposed to any particular change,
then you can stop asking after a small number of people. :p
