Here's a start, with just a little modification and extension of what's
already in the Drupal handbook:
Drupal's flexible category system allows administrators to create a
virtually unlimited number of separate classification schemes for
content. Whether creating either very simple sets of categories or
extremely complex taxonomies (category sets with hierarchical
relationships), administrators also choose with which or how many Drupal
node types to use these classifications. Each category group, or
vocabulary, can contain multiple category entries, or terms, for tagging
content.
To create a category set, first define a vocabulary and then add terms.
New terms can continue to be added later even after categories are
already in use.
