You don't want to change them now that you have begun administering the 
survey. It's been about five years since I've studied quantitative 
research methods, but I do remember there was some minor reason why the 
agreement scale is used for measuring attitudes instead of choices like 
"easiest/hardest."

More important to keep in mind for the future is that the best practice 
is to provide as many positive as negative choices so that the survey 
taker can balance the weight of their responses in their decision making 
process. This also assists in analysis since there are an equal number 
of positive and negative choices for the point of comparison by the 
researcher.

Also, one other issue is that "N/A" is different than "undecided." N/A 
only represents one possible non-differentiated response. For instance, 
the survey taker might feel that the task is neither too hard nor too 
easy, yet that it is an applicable question. Nevertheless, "N/A" can 
work if the idea is to make the survey user choose between the positive 
and negative respones when they do feel the questions are applicable, 
although I suspect this can introduce inconsistent responses since some 
will choose "N/A" in this case, some not.
