Security, expandability and themability.

Security: even if you manually create a POST data, only the fields defined  
by Drupal are taken into account. You can't choose something that's not  
listed with select, radios and checkboxes fields.

Expandability: you can chane any form, add callbacks at almost any point  
of the process.

Themability: you can have a theme function for any part of any form.
