Another module to look at is the CTools suite (http://drupal.org/project/ctools) by the man who brought us views. It wasn't my cup of tea in the end but there's also a pretty good example at http://www.nicklewis.org/using-chaos-tools-form-wizard-build-multistep-forms... which takes you through it in some depth.
