If you're talking about Drupal 7, the node example and field example in the
Examples project will be useful (http://drupal.org/project/examples).

For Drupal 6, the node example in Examples explains how to add extra data
and behavior (not really fields).

And Jeff's link is one of several ways to add CCK fields in D6.
