Assuming the labels are properly using the Drupal t() function, you could use http://drupal.org/project/stringoverrides to change the text.

Hi,
Maybe a simple thing, but I can't work out how to do it without changing the code directly. I want to change the labels in the UC Payment Pack to use the "cheque" spelling rather than "check". There are two spots, where it says "Checks should be made out to:" and next to the radio button where it says "Check or money order". Is there a way to do this in a more Drupal way?
