at the bottom of the views' preview area is a whole box for "performance"
try one, then the other, and see which one is faster. :-)
usually the decision of choosing node vs fields has more to do with need than speed, IMHO.

On the one hand, there are (likely) more queries for Nodes, but caching should also play a role.
