Anyone have any great solution for attaching the node_view or something similar to the email after someone has purchased something using Ubercart? I want them to be able to see all the details of a node in the email. Any ideas?

The best place to get ubercart support is at: http://ubercart.org.
I know that ubercart has a dependency on workflow_ng so maybe what you want can be done fairly easily. But I'm just guessing. go over to the ubercart web site and I'm sure you'll get great help.
