CentOS is going to have a longer lifecycle; Fedora Core has a very short EOL cycle because it's the stuff that's always on the leading edge of what's out there. So it'll have the newest, and CentOS will probably be more stable because of it.

I would say, this depends very much on how active your provider and/or you are in terms of keeping your system maintained. Having old versions of software, no matter how stable, on a server, is probably not such a good idea.
I'm running FC4, having transitioned from FC3. I've been impressed with how stable and well supported it is. FC4 is definitely a better choice than FC3 if you are going to be working with the SELinux (Security Enhanced Linux) extensions enabled (generally a good idea for a server)

If they offer FreeBSD consider it instead the linux distros.
