I need a module that will restrict access by role to content types and also, instead of only an Access Denied page, also remove the menu link. For some reason I thought that most just did that, but I used Node View Permissions and it did not. Any advice?

I have used http://drupal.org/project/content_access for this in the past.
Be sure to clear cache after you have it configured.

I use http://drupal.org/project/config_perms
Fill in the path in the settings and in the permissions you go to the permissions for the module: you can enable/disable the path per role and it doesn't show anymore in the menu. At least with the admin menu it doesn't (but you'll need to clear the admin menu cache to take effect).
