This is my first post to this list. My Name is Michael and I live in Auckland New Zealand (and shortly Melbourne Australia)
My area of professional expertise and work is Systems Administration. Ie: I setup and maintain the back end servers for business and internet service providers.
I have just installed Drupal 5.6, E-commerce 3.4 and associated required modules on a LAMP system.
I have mostly got my head around it except that I would really like to catagorise the products rather then having a 6+ page continuous list.
How can this be done please?
Also I would like to obtain offers from original theme developer(s) to provide something professional for this website. I already have the logo completed.

Use taxonomy (categories) to create categories for your products and assign them to those categories. Then you can use the Views module to create views of products by category.

Sounds like you need to read up on drupal.org about what Taxonomy is and how to use it--it is a bit complicated at first to grasp. You must assign a term to each product by selecting one from the dropdown. Then you can use the Views module (which you must upload and install) to create Views based on taxonomy terms. Read the docs on Views also as it is a complex module.

I've set up my sub category pages using views and applied the correct configuration so that each page only displays the products relevant to its category.
I have also assigned each page a URL.
But I can't work out how to create a categories page listing and linking to the above sub category pages.

Go through the category admin and the view edit again, I'm pretty sure this is something that can be turned on and off somewhere in there.

The Views module is able to show a listing of nodes within Drupal. What you are seeking is a list of taxonomy terms, not nodes. I do not believe the Views module can do this. I myself have accomplished this feature with a bit of custom coding, but there may be a better solution.

Tends to make Drupal look wanting for e-commerce use because by default the e-commerce module produces 6 'teaser' pages for my 50 or so products and people don't want to go through that many to find what they want...

Try taxonomy_menu module to create links in a block for your categories. That is the standard way AFAIK.

Create a view that has an argument that is the taxonomy term. Set the view to display a summary page when the argument does not exist. This will give a listing of taxonomy terms along with the count of nodes contained within that term and a link to see all the nodes associated with that term.

Normally people on a mailing list have some degree of passion for their project. It appears that this is absent from the Drupal community. I participate in other OS mailing lists where people help each other and I help people when they have a problem I can assist with. But for a project that claims to have so many adherents like this I would have thought somebody could provide some assistance. The support mailing list seems to be more active at some times than other. Keep in mind that support tends to be diffused a bit .. there is the mailing list, the live irc chat support room, the support forums on drupal.org, etc.. If you don't get a bite in one place, it can be worth casting your line into one of the other ponds.
As for the problem you are having, what are the fields and filters that you've configured for the View responsible for the overview page?

I have to say that I have had just the opposite experience, I've found the community to be very welcoming and helpful both online and in person. Besides this list, you might look at the groups.drupal.org site to see if there are any local groups in your geographical area or project area. And if there is a Drupal Camp you can get to, it is well worth attending. Sometimes questions seem to go unanswered because they are lacking specific details.

I've seen a bunch of responses (yes many from the same person but still) to your questions. I would say that's pretty good. It is over a weekend and a holiday one at that and many people on this list are only active during the week from their day jobs. I have had many questions go unanswered myself, but have also had many many answered quite well and I answer many other people's questions as well. But like others I do not get paid to sit and read questions on this list - so my activity on it waxes and wanes to the tides of what else is going on in my life. I am just glancing at the list activity for a minute for the first time in days and even now only have a few minutes to look. That doesn't mean I am not passionate about drupal.
As for your question you probably have to use arguments. Your main url will then be something like /categories/ and then your argument will define the next part (such as /categories/hard%20drives or /categories/20 with the products and then the product page - or however you define it. Search for some tutorials on using arguments and you should be able to get this working.
